Chunky winter soup

15 ml sunflower oil
1 onion, chopped
300 g frozen mixed vegetables
1 ml dried thyme
250 ml red lentils, picked over and rinsed
1 packet ROYCO Minestrone Soup
1,5 litres water
75 ml tomato puree
salt and pepper, to taste
1. In a large saucepan, sauté onion in boil. Add mixed vegetables
and
thyme and toss until hot. Add lentils.
2. Mix soup powder with water, add tomato puree and stir into
lentil mixture.
3. Bring to the boil, reduce heat and simmer for 30 minutes, or
until lentils are cooked. Season to taste.
Preparation Time 10 minutes Cooking Time 30 minutes Serves 6
